Recipe: chocolate pecan cookies (V, GF)

Here at Nurture and Nourish MD our passion for feeding doesn’t stop at the baby! Moms need nutrient dense, whole foods that can satisfy hunger and keep milk production going strong.

These cookies are an adaptation from a recipe in Tim Spector’s “The Food for Life Cookbook”. They are filled with gut satisfying fiber, healthy fats and of course some good dark chocolate.

Ingredients:

2T milled flax seeds

3T brown sugar or coconut sugar

3T extra virgin olive oil

1T vanilla extract

1c almond flour

pinch salt

2 oz dark chocolate, roughly chopped

1/3c pecans, chopped

In a bowl, mix together the ground flax and 4 tablespoons of water. Let sit for about 10 min until thickens. Whisk in the sugar, oil and vanilla extract. Stir in the almond flour and salt, then pecans and chocolate. Drop rounded tablespoonfuls onto a cookie sheet about 2 inches apart. Bake at 375 for 12-15 minutes or until slightly golden around edges. Makes about 12 cookies.
